Gazpacho



Gazpacho is a cold raw vegetable soup that originated in Spain. Since the weather has been warm, I figured this would be perfect to serve alongside some sandwiches. I loved chopping up all the fresh veggies and fruit and adding them to the blender. The smell was just so crisp and fresh. This makes for a great appetizer or side dish.


Serves 8 to 10

Ingredients
* 4 cups tomato juice
* 1 onion, minced
* 1 green bell pepper, minced
* 1 cucumber, chopped
* 2 cups chopped tomatoes
* 2 green onions, chopped
* 1 clove garlic, minced
* 3 tablespoons fresh lemon juice
* 2 tablespoons red wine vinegar
* 1 teaspoon dried tarragon
* 1 teaspoon dried basil
* 1/4 cup chopped fresh parsley
* 1 teaspoon sugar or agave nectar
* salt and pepper to taste

Directions
1. In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined but still slightly chunky. Chill at least 2 hours before serving.

  1. Yum! I love gazpacho, Jacklyn! You know, I can't get good tomatoes where I live though. I'll just have to imagine how yummy this is (smile)...

  2. Really? How horrible. I heard some people use a can of whole tomatoes or diced tomatoes instead. But I am sure the taste isn't exactly the same.

  3. I made a very similar recipe just the other day, and have been eating leftovers ever since. So yummy and refreshing. I don't usually keep fresh tomatoes around since I don't really like them, so I used a can of diced tomatoes. It was still good!

  4. The tomato soup looks so yummy! I wish I could have grown my own tomatoes.
    I remember as a kid I could just eat fresh homegrown tomatoes as a dessert scattered with a little white sugar. :-)) At that time, it's hard to imagine, for me, buying canned food...and I was wondering why people bought them...well, these days, I do buy them...:-((

  5. Jade - My recipe makes a lot too and I found that I couldn't eat a huge bowl of it, even though it was so good. If the price of tomatoes ever climbs too high, which I am slowly starting to notice, I just might have to use canned tomatoes too.

    Angie - I knew a girl in kindergarten who used to eat tomatoes as dessert too. I love fresh tomatoes and wish I had my own plant. I prefer fresh tomatoes to canned but when I can't afford them, canned will just have to do. But the taste in no way compares to eating them fresh.
